Risk factors and related deaths in the United States
The good news is that potato products do NOT play a leading role in the total salt consumption. Cereal products and meat products are the main sources in the diet. E.g. in the Canadian diet, potatoes contribute about 3% and in data from the UK, potatoes counted for 1-2% and savoury snacks 2-3%. If savory snacks is the first product that comes to mind when talking about salt, you may want to try this quiz on salt contents of foods and you will be surprised.

Locations of the Frito-Lay potato chips factories in the United States
Recently Frito-Lay started a campaign in the US to show consumers where their bag of Lays Chips was manufactured and even where the potatoes for that specific bag were grown: the Chips Tracker. In the ads, Frito-Lay features potato farmers growing their chips potatoes in California, New England, Texas, Michigan and Florida.

La Bonnotte is harvested by hand
In France, on the Island of Noirmoutier, they figured it out: instead of selling potatoes at the regular market price, they created a niche market for a specifically grown premier potato so exclusive that the potato ended up on this somewhat obscure list of the most expensive foods in the world: Voila, La Bonnotte.
 
Although the exclusivity of "La Bonnotte" will not likely be outdone, it makes you wonder: what other opportunities for special potatoes are feasible?
