Food Safety Breakthrough: Thermo Scientific Arena Analysers enable Food Companies to routinely measure Acrylamide precursors, including Asparagine

Thermo Fisher Scientific Inc., the world leader in serving science, announces the introduction of a new set of highly automated and easy to use applications for potato snack & french fries producers on it’s Thermo Scientific Arena analyzers. The applications are to measure reducing sugars (D-glucose, D-fructose), sucrose and asparagine, which form acrylamide under certain processing conditions. Acrylamide is reported to be potentially toxic for humans and it is found in many food products.

 

Arena 20 analyzerThe risk of acrylamide formation can be reduced by selecting properly stored, appropriate raw material. To test the raw material, a rapid, automated method applied to Thermo Scientific Arena analyzer is now available using the pressed juice of potato mixed with a special diluent. Automated, and easy to work with, the Arena analyzer gives the opportunity to increase productivity and to perform testing near the production line whereby the speed of achieving test results increases.

On April 24, 2002, researchers at the Swedish National Food Administration and Stockholm University reported about finding the chemical acrylamide in a variety of fried and oven-baked foods. The initial Swedish research indicated that acrylamide formation is particularly associated with traditional high temperature cooking processes for certain carbohydrate-rich foods. Since the Swedish report, similar findings have been reported by researchers in numerous other countries, including Norway, the United Kingdom, Germany, Canada, Japan, Korea, and Switzerland.

 

Analysis by the FDA revealed that U.S. results were also in basic agreement with the findings of the Swedish study. The discovery of acrylamide in food is a concern because acrylamide is a potential human carcinogen and genotoxicant, based on high-dose animal studies, and a known human neurotoxicant.
