During the production of pre-fried french fries, problems can occur if
the potatoes used in the process start becoming opaque. This happens when
the starch in potatoes is converted into sugars. Certain varieties are more
susceptible to this process than others, but the weather during the growing
season can also have an influence. If potatoes with opaque patches are
processed into french fries, the individual french fries may also have
opaque tips. During frying these tips will take on a deeper brown colour
when the sugars caramelises in the hot oil. And consumers aren't keen on
these 'burnt' tips, particularly in light of the debate about acrylamide.
Major potato processors therefore use the WOS-1A/spec. This machine has been
especially developed by Sormac to remove the opaque tips from potatoes. The
potatoes are automatically positioned in the machine, then firmly held so
the top can be sliced away.
The potatoes are positioned using a star shaped roller made of coated foam,
especially designed by the engineers at Sormac for the WOS-1A/spec. This
soft foam roller ensures the potatoes are not damaged in any way. The
coating applied using an advanced spray technique naturally complies with
all food hygiene standards.
The WOS-1A/spec isn't just a super performer with potatoes, this machine is
also suitable to top courgettes and cucumbers. In fact, one machine is even
used to slice corn cobs!
