Dear Subscriber,
Amid all the Wall Street turmoil and worldwide economic
jitters there were quite some worthwhile news stories
related to potatoes and potato products.
Potato Prices
Several weeks ago we were discussing what would happen to
the potato price,
after Simplot first raised the potato
price in Australia. We have an answer now. Prices go up
everywhere, with percentages
as high as 50% for
potato harvest 2009. If
this is any indication of the time it takes before price
increases anywhere in the supply chain are translated to
prices at retail level, food inflation will be with us for a
while here. Luckily a number of other cost factors of potato
products are coming down, such as vegetable oils and energy.
Trans fat free frying oil at Burger King
It also became easier to eat your french fries fried in a
healthy oil:
Burger King announced that they have switched
in the entire United States to a trans fat free oil, or as
Burger King specifies it: "two proprietary blends of three
oils". I would prefer to know what they are, but it looks
like Burger King wants to keep it a secret. If the secret
get's out, you know
where to find what frying oils fast food restaurants use.
We also offer a
brand new and inexpensive book on oils and fats in the food
industry.
Talking about secrets:
McDonald's wants us to know more
about their french fries. We may get back to that at a later
time.
Calorie counts on Menu boards at KFC
The listing of calories on menu boards was first proposed
and introduced in New York City as a measure in the
fight against obesity. All major restaurant chains initially
resisted the listing of calories on menu boards when it was
proposed in New York City.
Now similar legislation for the State of California was
just signed into law by Arnold Schwarzenegger. Maybe not
that surprising, given the leading role (good and bad)
California has related to health issues.
The more surprising part of this story is that Yum!
Brands (KFC, Pizza Hut, Taco Bell) now uses the calorie
listing on menu boards to go on the attack in the fast food
health arena and
announces that they will post calories on
menu boards in all their US restaurants and call upon their
franchisees to do the same.
Yum! Brands move even attracted praise from one of the
staunchest critics of the industry, CSPI director Michael
Jacobsen:
“Yum! Brands groundbreaking announcement that it
will add calorie counts to the menu boards at KFC, Pizza Hut
and Taco Bell is fabulous news for health-conscious
consumers. Yum! is leaping ahead of all its competitors by
providing the one piece of nutrition information that
consumers most want. We applaud this move and encourage
other major chains to follow this bold example. Yum! has
gone an important step further by voicing its support for
legislation that would require restaurants to list calories
on menus and menu boards”
Never boring....

Oils and Fats in the Food Industry
Oils and fats are almost ubiquitous in food processing despite
the impression given by several sources to the contrary, they
remain an essential part of the human diet. However, it is increasingly
apparent that both the quantity and the quality of the fat consumed
are vital to achieving a balanced diet. Health concerns regarding
high-fat diets continue to have a high profile, and still represent
a pressing issue for food manufacturers.

Featured article of today is a scientific publication by
Scientists of Simplot Plant Sciences on how they are able to
use genetic modification to obtain potatoes that result in
lower acrylamide levels in french fries and potato products.
The publication, by Caius Rommens et. al., in Plant
Biotechnology Journal describes how the Simplot
researchers achieve this result by reducing the asparagine content in potatoes,
one of the precursors of acrylamide.
