Earlier this week the USDA published the latest data on potato harvest 2008 in the United States. A good time to
have a closer look! The table below is limited to the fall potato crop as
this is by far the most important crop for processing and I
focused on Idaho and Washington, together good for over 50%
of the US fall potato production:

And Idaho and Washington is where most French Fry
factories are!
Let me take a moment for a brief intermezzo about the geographical locations of the Potato processing plants in the United
States:
There is a distinct difference between the locations
of potato chips plants and the location of factories
producing french fries: Potato Chips plants are spread out throughout the
United States, while the french fry manufacturing plants are
highly concentrated in just a few area's (see below).

The explanation is straightforward and a lesson in
logistics: (Frozen!) French Fries can be
stored for a long time and are compact, while potato chips
have a much shorter shelf life and are bulky and hence
expensive to transport.
Finally a morale booster for those places in the world
where the potato yield is still low: looking at the potato
yield in Idaho between 1949 and now, the graph below shows a
continuous improvement of the potato yield per acre.
In the 59 years represented in the graph, the average potato yield in Idaho
more than doubled.
So it may well be possible to increase potato yield at
your location! The graph also shows the reduction in
harvested potato acreage in Idaho in the last decade.
