It is not that microwavable french fries are something new.
They are around for quite a while in various shapes and forms.
For french fries, the microwave is at the top of convenient
preparation methods at home: no hassle at home with fryers and
frying oil and much faster than preparation in the oven.
So why is preparation of french fries in the microwave not
more common?
This has to do with the very essence of the structure of
a french fry: a crispy crust and a moist interior. A french
fry is like that, because during frying the potato strips are
heated from the outside - in. But guess what, a microwave
works exactly the other way around: it heats the product from
the inside out, making the "natural state" of a microwave heated
french fry limp and soggy. But the food technologists in the
potato industry have fixed that and have gotten better in it
over time. Nevertheless, the perfect microwavable french
fry is kind of the holy grail in the retail french fry market
and I see it as a potential game changer in this market.
Enters an iconic brand: Burger King. Burger King is no stranger
to licensing it's brand to products in the retail sector. For
years we see a number of Burger King branded savoury snacks
manufactured by the
Inventure Group and recently BK announced that their
"Apple fries" will be available in retail as well.
" In these leaner times, restaurant chains are recognizing
licensing as an excellent way to simultaneously generate new
revenue and promote the brand",
said Bill Cross, VP of food licensing for the Broad Street Licensing
Group, the company that brokered the deal between BK and
Conagra Foods Lamb Weston.
