His mono-food 20 Potatoes a Day Diet successfully behind him, Chris Voigt, executive director of the Washington State Potato Commission, is turning to potato recipes he wished he could have eaten during his two-month regimen.

In response to all the fans who wrote Voigt wanting the recipes he used during the 60-day diet, the Commission has engaged recipe developer, food writer and chef David Bonom to create new potato recipes that are healthy and tastier than Voigt’s Spartan diet fare.

Voigt announced his plans in mid-September of last year, saying, “I want to show the world that the potato is so healthy that you could live off them alone if you had to without any negative impact to your health.” Indeed, his health actually improved by several indicators;his weight dropped from 197 to 176, his cholesterol from 214 to 147, his blood glucose from 104 to 94, and his triglycerides from 135 to 75.

Throughout the diet, people asked for recipes. “You don’t want to eat what I’m eating!” Voigt kept telling them. There is only so much to be done with some oil for cooking, hot sauce, and herbs and spices. But he promised potato recipes that were healthy and could be incorporated into a balanced diet.

David Bonom is producing dozens of wholesome—and delicious-- potato recipes for breakfast, brunch, lunch, snack and dinner, all of which are easily accessible to the home cook. Bonom is a regular contributor to Cooking Light magazine and his work appears frequently in many other magazines, including Better Homes &Gardens, Health, Weight Watchers, Prevention and more. In addition, he has contributed to over 50 cookbook and diet plan books, including a number of best sellers, such as The Flat Belly Diet and The Skinny Carbs Diet.

The recipes will be posted to the 20 Potatoes a Day and potatoes.com websites beginning in February and collected in an illustrated publication available in print and downloadable from the web in the spring.

Additionally, Voigt will be continuing his video star career by cooking up some of the recipes and posting the results to the 20 Potatoes a day website.
