Kufri Uday is an early-maturing, main-season, high-yielding table potato variety developed by the ICAR–Central Potato Research Institute (CPRI), Shimla. It is a clonal selection derived from the cross CIP387521.3 × Aphrodite.
The plants are medium-tall, vigorous, and exhibit field resistance to late blight. Kufri Uday produces attractive red-coloured, ovoid tubers with shallow eyes, yellow flesh, and a mealy texture, making it ideal for table use.
This variety contains 18–19% tuber dry matter and has excellent keeping quality during storage. It is fertilizer-responsive and capable of yielding 36–38 tonnes per hectare under optimal agronomic practices.
Recommended region: Suitable for cultivation in the northern, central, and eastern plains of India.
