Veg of Lund is rooted in scientific food innovation research at Lund University.  The Swedish start-up developed a plant-based drink from potato and rapeseed oil.

These ingredients delivered everything they wanted, yet it was challenging to mix them (like oil and water). So they developed a process to mix these into a smoothie and got their very own patent, and My Foodie® by Veg of Lund was born.

Potato Milk: Swedish scientist makes dairy substitute from potatoes

A smoothie based on 'potato milk' is expected to be commercially available next year. The product is made using a patented process using an emulsion of potato and omega-3 oils as a dairy replacement developed at Lund University by Eva Tornberg.
