Project Opportunity is a European-based collaborative venture that focuses on the value chain of starch potatoes in the processing industry.  The initiative brings together organizations involved in potato production, breeding, processing, and development. The focus is on employing CRISPR-Cas gene-editing to improve features including late-blight resistance and compatibility for industrial starch extraction.

The project aims to improve the competitiveness of the European potato-starch sector by advocating for regulatory approval of specific gene-editing techniques (SDN1) under conditions similar to traditional plant breeding, with the goal of reducing labelling and promoting innovation in starch-potato varieties.
