Variety Description
Elongated and curved, it's impossible not to recognise it: it's the Ratte du Santerre. It's fine, yellow flesh and nutty taste make it a great favorite of gourmets. The firmest of the firm fleshes is ideal in salads, steamed or roasted and its consistency is perfectly suited for long cooking or simmering.
