Potatoes are cultivated across a remarkably wide range of agricultural environments, from the cool temperate regions of Europe and North America to the tropical highlands of Asia, Africa and Latin America. The crop is particularly well adapted to temperate, subtropical and high-altitude tropical environments because tuber development is favored by relatively cool conditions. Today, potatoes are grown in more than 150 countries and occupy an important position in global food systems, supporting fresh markets as well as processing industries producing French fries, chips, starch, flakes and other value-added products. Asia has become the leading production region, while Europe remains a major center for commercial production, processing, seed systems and international trade.

Asia is the largest and fastest-growing major potato-producing region, with China and India accounting for a substantial share of production. Potato cultivation in the region is highly diverse, ranging from highland systems in the Himalayas and western China to winter production across the Indo-Gangetic Plains and multiple-cropping systems in parts of China and Southeast Asia. Europe has a mature and highly mechanized potato sector, particularly in countries such as Germany, France, the Netherlands, Belgium, Poland and the United Kingdom, where potatoes supply both fresh markets and large processing industries. In North America, the United States and Canada have similarly specialized production systems, with strong industries for frozen French fries, potato chips, dehydrated products and seed potatoes.

Potato production has also expanded significantly in Africa and other developing regions, where the crop is increasingly important for food security, farmer income and urban food markets. Countries in eastern and northern Africa, including Kenya, Ethiopia, Rwanda, Egypt and Algeria, have developed important production systems, while South America remains especially important for potato biodiversity and traditional cultivation. The Andes continue to contain thousands of native potato varieties adapted to diverse elevations and climatic conditions. Globally, the potato industry therefore combines highly mechanized commercial farming with smallholder and traditional production, while improved varieties, quality seed, irrigation, storage, processing capacity and disease management continue to shape regional development.

The potato, Solanum tuberosum, originated and was domesticated in the Andean highlands of South America, particularly around the Lake Titicaca region of present-day Peru and Bolivia. Archaeological and genetic evidence indicates that Indigenous communities began domesticating wild potato plants thousands of years ago, with FAO describing a history of approximately 8,000 years. Over centuries, Andean farmers selected and maintained a remarkable diversity of potatoes adapted to different elevations, soils, temperatures and day lengths. More than 4,000 native potato varieties are still associated with the Andean highlands of Peru, Bolivia and Ecuador, making the region one of the world's most important centers of potato genetic diversity.

Following the Spanish conquest of South America, potatoes were introduced to Europe during the 16th century. From Europe, the crop gradually spread to other parts of the world through trade, maritime movement and European colonial expansion. Potatoes became increasingly important in Europe during the 17th and 18th centuries and later expanded into Asia, Africa and other regions. Historical genetic research shows that early European potatoes were closely related to Andean landraces and subsequently incorporated genetic material from Chilean potatoes, helping the crop adapt to Europe's longer summer day lengths. Over time, potatoes shifted from an Andean subsistence crop to a globally important food and industrial crop, with Asia and Africa becoming major centers of production in the modern era.
