The FEX 300 Fryer is an industrial frying system designed to efficiently process products in a continuous frying operation. The fryer consists of an elongated trough filled with frying oil, within which a wire metal belt conveyor transports the product from one end to the other.
Key Features & Functionality
- Oil Circulation System: A centrifugal pump circulates a stream of oil in the same direction as the product, delivering consistent heat to the product throughout the frying process. As the oil moves through the pan, it slightly cools. Once it exits the pan, it is sucked back in by the circulation pump and reintroduced into the pan at the product inlet end. The oil passes through an external heat exchanger where it recovers its temperature before being reintroduced into the frying pan.
- External Heating System: The fryer is heated by an external boiler equipped with a gas burner. The combustion gases from the burner transfer heat to the oil circulating through a tubular coil. The oil then exits the system through a chimney after it has transferred its heat to the product, ensuring optimal frying temperatures are maintained.
- Filtration System: Before entering the circulation pump, the oil passes through a continuous filter to remove coarse particles, maintaining the oil’s cleanliness and quality. Additionally, an optional centrifugal filter can be installed to separate smaller particles for further oil purification.
- Conveyor System: The conveyor system, depending on the nature of the product being processed, may feature pallets and/or conveyor belts. To facilitate easy cleaning, the conveyor is mounted on a lifting system that allows it to be lifted 50 cm above the trough.
- Automatic Oil Level Maintenance: The oil level is automatically maintained by a floater, which replenishes the oil as it is consumed during the frying process, ensuring a consistent level for optimal frying conditions.
- Temperature Control: The temperature of the oil as it enters the frying pan is set by the operator and is maintained by a thermostat, which controls the burner’s actuation to keep the oil at the desired temperature throughout the operation.
