Canberra is a beautiful deep red skin and white flesh, Canberra's have a medium starch content making them an excellent multi-purpose potato, being not too floury or too waxy. With an excellent flavour, they are suitable for roasting, pan frying and baking; making a magnificent choice for dauphinoise or potato gratin.
