Pillpintu Pasña, meaning “Señorita Mariposa” or “Young Butterfly Woman,” is a rare and visually striking potato variety from the Andean highlands. Recognized for its pale purple skin with creamy eye-like markings, this variety produces high numbers of compressed tubers and is favored for boiling and soups. Its elegant appearance and culinary quality make it highly appreciated in rural communities.
