Dehydrated potatoes are fresh potatoes that have had most of their moisture removed through controlled drying. They are available as cubes, dices, slices, shreds, flakes and other forms. Removing moisture makes potatoes lighter, easier to store and suitable for longer-term use while allowing them to be rehydrated before cooking.
