Enhancing yield and capacity is critical in the food processing industry, particularly in steam peeling. A proven strategy to achieve this is reducing steam times, thereby preventing over-peeling. 

However, this approach necessitates re-peeling to ensure all potatoes are completely peeled. Typically, this involves optical sorting followed by mechanical repeeling. The conventional method is an abrasive roller peeler, but disk or drum knife peelers have also been used.

When using conventional abrasive peelers one of the challenges is the fast clogging up of the abrasive rollers another is the abundant usage of water. When it comes to conventional knife-peelers the challenges are low yield and capacity. 

Forsfood Solutions 

In the Forsfood peelers, the knife roller speed is over 2000 rpm, which is significantly higher than in conventional roller peelers. 

The increased rotation speed also keeps the knife rollers cleaner and assures a stable peeling result during the hole production, the need for roller maintenance cycle is significantly prolonged.

The usage of water is also minimized. The increased roller speeds allow for an increased product load. Increased product load maintains a gentle tumbling in the peeler. Increased product load and roller speeds increase the capacity.
