Eagle Eye Produce has completed a new red and yellow potato packing facility in Idaho Falls, adding automation and AI-powered optical grading to improve efficiency, quality and flexibility while supporting program growth.

Eagle Eye Produce’s Idaho Falls facility is redefining potato packing with AI-powered graders, robotic sorters, and upgraded lines to boost speed, reduce waste, and improve quality—delivering smarter, more consistent results for customers.

Eagle Eye Produce had been harvesting new crop potatoes for several weeks before beginning harvest for its storage supplies the week after Labor Day. While it is still too early to know the overall projection for the crop.

The Idaho potato harvest has started. For Eagle Eye Produce, the harvest kicked off in central Idaho during the first week of August with their russet potatoes.
