Innovation isn’t the first thing that comes to mind when you think of a potato facility—but Eagle Eye Produce is changing that. Their Idaho Falls warehouse has undergone major upgrades to increase packing speed, cut waste, and ensure more consistent quality.

Rethinking What a Potato Facility Can Be

Potato packing has traditionally depended on manual labor and conventional machinery. However, with the advent of advanced tools and smarter systems, Eagle Eye Produce has begun investing in technology to boost efficiency and maintain high product quality.

Upgrades to Eagle Eye Produce’s Russet Line

Here’s what’s new:

  • AI-powered graders use cameras and sensors to analyze each potato in real time
  • These systems have been trained to recognize a wide range of defects, including shape, color, and surface damage
  • The AI-powered system improves over time by learning from new examples and feedback
  • Robotic sorters that can make 100 picks per minute
  • No equipment on the line is older than 2016

Rebuilding the Yellow Potato Line

Eagle Eye Produce has also rebuilt its yellow potato line from the ground up:

  • Replacing a mechanical sorter with an AI-powered optical sorter
  • The new sorter takes 7–9 photos of every potato
  • This improves sizing, consistency, and overall control
  • Eagle Eye Produce has increased capacity to up to 40 tons per hour.
