Dinesh Garg reinvented Aloo Bhujia and implemented it commercially by replacing raw potato at Bikaji Foods International, Bikaner, after which potato was never used again for Aloo Bhujia production. This breakthrough became an industry benchmark. Many of India’s leading savory manufacturers, who were among his earliest clients, credit him for saving them from challenges related to price variation, quality fluctuations of starch and sugar, water dependency, and waste management.
