En el Reino Unido se realizó un estudio en almacenes de conservación de patatas con la finalidad de saber qué niveles de CO2 existen normalmente a lo largo de la conservación, definir los efectos de este gas y del etileno en el sabor y textura de las patatas, efecto en microorganismos patógenos, e investigar si pueden existir riesgos para los trabajadores debido a niveles inusualmente altos de anhídrido carbónico.
El trabajo, de 137 páginas, y disponible en la web de Potato Council, en la sección de R&D/Publications/Storage, cuyos autores son G. Harper y A. Cunnington, menciona los límites de exposición para los trabajadores, que dependen del nivel de anhídrido carbónico en el ambiente: Más de 0.5% de CO2, el máximo admisible de exposición es 8 horas Más de 1.5% de CO2, 15 minutos Más del 4%, hay riesgos para la salud.
