Onderzoekers aan de Universiteit van Wisconsin-Madison zijn gekozen om een nationale multi-institutionele poging tot kwaliteitsverbetering van verwerkte aardappels te leiden.
Volgens de USDA’s National Institute of Food and Agriculture is er door het Specialty Crop Research Initiative een gift van 3,7 miljoen aan de onderwijsinstelling gegeven voor een project van vier jaar. Het onderzoeksdoel is de vermindering van de acrylamide in verwerkte aardappelen. Acrylamide is een potentiële carcinogeen, die veel voorkomt in eten dat met hoge temperaturen bereid is.
Volgens de projectleider, Paul Bethke en assistent-onderzoeker voor tuinbouw aan het UW-Madison en een USD-ARS plantenfysioloog, is arcylamide een ongewenst component in producten die op hoge temperatuur zijn bereid. Er wordt bij het onderzoek gekeken naar suiker en asparagine (een aminozuur) in de aardappel. Die twee stoffen vormen bij hoge temperaturen namelijk acrylamide.
Er is door de FDA (US Food and Drug Administration) nog niet vastgesteld of acrylamide in kleine hoeveelheden schadelijk is. In het adviescomité zitten 30 vertegenwoordigers uit de aardappelsector. Onderzoekers uit tien verschillende universiteiten helpen mee met het project. Het is de bedoeling om uiteindelijk vier nieuwe soorten patat te hebben en vier nieuwe frituuraardappelen waar minder acrylamide in vrij komt.
